Party Cookie Recipes - Pineapple Cookies Recipe

Ingredients

• 1 large egg, lightly beaten

• 1/2 cup/100 g granulated sugar

• 1/2 cup/50 g coarsely chopped pecans

• 1/2 cup/50 g coarsely chopped crystallized pineapple

• 1/2 cup/50 g shredded coconut, toasted

• 1/2 tsp vanilla extract/essence

• 1/3 cup/50 g confectioners'/icing sugar, to dust

Method:

1. Preheat the oven to 350°F/180°C/gas 4. Set out a 9 x 5-inch (23 x 12-cm) loaf pan.

2. Beat  the egg and sugar in a large bowl with an electric mixer at high speed until creamy.

3. Mix in the pecans, pineapple, coconut, and vanilla until well blended. Turn the mixture into the pan, smoothing the top.

4. Bake for 15-20 minutes, or  until lightly browned. Use a wooden spoon to mix the mixture after removing it from the oven. Cool completely in the pan.

5. Form the mixture into balls the size of walnuts and roll in the confectioners' sugar.
