Party Cookie Recipes - Passover Cookies Recipe

Ingredients

• 5 large eggs

• 2 1/2 cups/500 g granulated sugar

• 1/4 cups/310 ml vegetable oil

• 1/4 cups/180 g matzo meal

• 1 1/2 cups/225 g unsweetened cocoa powder

• 1 1/4 cups/125 g finely chopped pecans

Method:

1. Preheat the oven to 325°F/170°C/gas 3. Oil a 13 x 9-inch (33 x 23-cm) baking pan.

2. Beat the eggs and sugar in a large bowl with an electric mixer at high speed until pale and thick. Beat in the oil until well blended.

3. Mix in the matzo meal and cocoa. Pour the batter into the prepared pan and sprinkle with the pecans.

4. Bake for 30-35 minutes, or until dry on top and almost firm to the touch. Do not over bake. Cool completely before cutting into bars.
