Party Cookie Recipes - Mint Spritzers Recipe

Ingredients

• 1 cup/150 g all purpose/plain flour

• 1/8 tsp salt

• 1/2 cup/125 g butter, softened

• 1/3 cup/70 g granulated sugar

• 1/2 large egg, lightly beaten

• 1/2 tsp vanilla extract/essence

• 1/2 tsp mint extract/essence

• Few drops green food coloring

• 30 Hershey kisses

Method:

1. Preheat the oven to 400°F/200°C/gas 6. Butter two cookie sheets. Sift the flour and salt into a medium bowl.

2. Beat the butter, sugar, egg, and vanilla and mint extracts in a large bowl with an electric mixer at high speed.

3. Mix in the dry ingredients, followed by the food coloring. Refrigerate for 30 minutes.

4. Insert a star-shaped design plate into a cookie press by sliding it into the head and locking in place.

5. Press out the cookies, spacing about 1 inch (2.5 cm) apart on the prepared cookie sheet.

6. Bake for 8-10 minutes, or until just golden at the edges. Working quickly, press a chocolate into the center of each cookie.

7. Cool on the sheets until the cookies firm slightly. Transfer to racks and let cool.
