Party Cookie Recipes - Marshmallow Party Cookies Recipe
Ingredients

1 1/2 cups/225
g all
purpose/plain flour
-
2 tbsp unsweetened cocoa powder
-
1 tsp baking powder
-
1/8 tsp salt
-
1/2
cup/125 g butter, cut up
-
1/2 cup/100 g granulated sugar
-
1 large egg yolk, lightly beaten
-
20-24 white
marshmallows
Method:
-
Preheat the oven
to 375°F/190°C/gas 5. Butter three cookie sheets.
Sift the flour, cocoa, baking powder, and salt
into a medium bowl.

Use a pastry blender to cut in
the butter until the mixture resembles fine crumbs.
Stir in the sugar.

Mix in the egg yolk. Press the
dough into a disk, wrap in plastic wrap, and
refrigerate for 30 minutes.

Roll
out the dough out on a lightly floured surface to a
thickness of 1/4 inch (5 mm). Use a 2-inch (5-cm)
cookie cutter to cut out the cookies.

Cut out the
centers from half of the cookies with a 1-inch
(2.5-cm) cookie cutter.

Gather the dough scraps,
re-roll, and continue cutting out cookies until all
the dough is used.

Bake, one sheet at a time, for
10-15
minutes, or until
golden brown. Transfer the cookies with holes to
racks.

Place a marshmallow on the top of each
whole cookie and bake for 3 minutes, or until the
marshmallow has melted.

Immediately stick a ring
cookie on top of each marshmallow base. Transfer
to racks to cool.
