Party Cookie Recipes - Festive Walnut Cranberry Bars Recipe
Ingredients
1 1/4 cups/180 g all purpose/plain flour
1/8
tsp salt
1/2 cup/125 g butter, melted
3/4 cup/150 g granulated sugar
1 large
egg, lightly beaten
2/3 cup/70 g finely
chopped walnuts
1/2 cup/125 g fresh or frozen cranberries
1 cup/150 g confectioners'/icing sugar
2-3 tbsp hot
water
2-3 drops red food
coloring
Method:
Preheat the oven
to 350°F/180°C/gas 4. Butter a 9-inch (23-cm)
baking pan. Sift the flour and salt into a medium
bowl.
Mix the butter and sugar in a medium bowl. Add the egg, beating until just blended.
Mix in
the dry ingredients, walnuts, and cranberries. Spread the mixture in the prepared pan.
Bake for
30-35 minutes, or until golden and a toothpick
inserted into the center comes out clean. Cool
completely in the pan.
Cut into squares. Mix the
confectioners' sugar and water in a small bowl. Add
the food coloring until well blended. Drizzle the
glaze over the tops of the cookies.
