Sift the flour
and salt into a medium bowl. Beat the butter in a
large bowl until creamy.

Mix in the dry
ingredients and milk to form a smooth dough.
Refrigerate for 30 minutes.

Preheat the oven
to 375°F/190°C/gas 5. Set out three cookie sheets.
Roll out the dough to a thickness of 1/4 inch (5mm).

Use a 2-inch
(5-cm) tree-shaped cookie cutter to cut out the
cookies. Continue cutting out cookies until all the
dough is used.

Dip the cookies
in the sugar and place 1 inch (2.5cm) apart on the
cookie sheets.

Bake for 8-10
minutes, or until just golden at the edges. Let cool
completely.

Filling: Beat the
butter and vanilla in a medium bowl until creamy.
Beat in the confectioners' sugar and milk.

Add the green
food coloring. Stick the cookies together in pairs
with the filling.
