Party Cookie Recipes - Christmas Butter Cookies Recipe

Ingredients

  • 1 1/2 cups/225 g all purpose/plain flour

  • 1/2 tsp ground cinnamon

  • 1/8 tsp salt

  • 2/3 cup/140 g + 2 tbsp granulated sugar

  • 2 tsp freeze-dried coffee granules, dissolved in 1 tbsp hot water

  • 1 cup/250 g butter, cut up

  • 2 cups/200 g coarsely chopped toasted hazelnuts


Method:

  1. Preheat the oven to 325°F/170°C/gas 3. Set out two cookie sheets. Sift the flour, cinnamon, and salt into a large bowl.

  2. Use a pastry blender to cut in the butter until the mixture resembles coarse crumbs. Stir in 2/3 cup (140 g) sugar and the coffee.

  3. Press the dough into a disk and knead it lightly. Place the hazelnuts on a large plate.

  4. Form the dough into balls the size of walnuts and roll in the hazelnuts until well coated.

  5. Place the cookies 1 inch (2.5 cm) apart on the cookie sheets, flattening them slightly. Sprinkle with the remaining sugar.

  6. Bake for 20-25 minutes, or until faintly tinged with brown on top and slightly darker at the edges.

  7. Cool on the sheets until the cookies firm slightly. Transfer to racks to finish cooling.
