Nut and Spice Cookie Recipes - Wedding Rings

Ingredients

  • 2 2/3 cups/400 g all-purpose/plain flour

  • 2 tsp baking powder

  • 1/8 tsp ground cinnamon

  • 1/8 tsp salt

  • 3/4 cup/150 g granulated sugar

  • 3 large eggs

  • 6 tbsp butter, softened

  • grated zest of 1/2 lemon

  • 2-4 tbsp milk

  • 2 tbsp pine nuts


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butler two cookie sheets.

  2. Sift the flour, baking powder, cinnamon, and salt into a medium bowl. Stir in the sugar.

  3. Use a wooden spoon to beat the eggs in a large bowl until pale and thick. Beat in the butler and lemon zest until well blended.

  4. Mix in the dry ingredients and enough milk to make a stiff dough. Break off balls of dough the size of walnuts and form into 4-inch (10-cm) ropes.

  5. Form the ropes into rings and sprinkle with the pine nuts. Use a spatula to transfer the cookies to the prepared cookie sheets, placing 1 inch (2.5 cm) apart.

  6. Bake for 15-20 minutes, or until just golden. Transfer to racks to cool.
