Preheat the oven
to 350°F/180°C/gas 4. Butler two cookie sheets.
Sift the flour,
baking powder, cinnamon, and salt into a medium
bowl. Stir in the sugar.
Use a wooden
spoon to beat the eggs in a large bowl until pale
and thick. Beat in the butler and lemon zest until
well blended.
Mix in the dry
ingredients and enough milk to make a stiff dough.
Break off balls of dough the size of walnuts and
form into 4-inch (10-cm) ropes.
Form the ropes
into rings and sprinkle with the pine nuts. Use a
spatula to transfer the cookies to the prepared
cookie sheets, placing 1 inch (2.5 cm) apart.
Bake for 15-20
minutes, or until just golden. Transfer to racks to
cool.
