Nut and Spice Cookie Recipes - Walnut Ginger Cookies

 

Ingredients 

  • 2 cups/300 g all-purpose/plain flour

  • 1 tbsp baking soda

  • 1 tbsp ground ginger

  • 1/4 tsp salt

  • 1 cup/200 g firmly packed light brown sugar

  • 3 tbsp light corn syrup/golden

  • 3 tbsp water

  • 1 large egg

  • 1/2 cup/50 g finely chopped candied cherries

  • 1/2 cup/50 g finely chopped walnuts


Method:

  1. Preheat the oven to 375°F/190°C/gas 5. Butter three cookie sheets.

  2. Sift the flour, baking soda, ginger, and salt into a medium bowl.

  3. Beat the brown sugar, corn syrup, water, and egg in a large bowl with an electric mixer at high speed until well blended. 

  4. Stir in the dry ingredients, cherries, and walnuts. Drop teaspoons of the dough 2 inches (5 cm) apart onto the prepared cookie sheets.

  5. Bake, one sheet at a time, for 10-12 minutes, or until just golden at the edges. Transfer to racks to cool.
