Nut and Spice Cookie Recipes - Visitors' Maple Cookies

 

Ingredients 

  • 1/2 cup/125 g butter, softened

  • 1/2 cup/100 g granulated sugar

  • 2 tsp light brown sugar

  • 2 tsp pure maple syrup

  • 1 1/3 cups/200 g all­purpose/plain flour

  • 1 tsp freeze-dried coffee granules

  • 2/3 cup/50 g finely chopped walnuts

  • 1/8 tsp salt


Method:

  1. Beat the butter, granulated and brown sugars, and maple syrup in a large bowl with an electric mixer at high speed until creamy.

  2. Mix in the flour, coffee, walnuts, and salt to form a soft dough. Turn the dough out onto a lightly floured surface and knead until smooth.

  3. Press the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes. Preheat the oven to 375°F/190°C/ gas 5.

  4. Butter and flour two cookie sheets. Roll out the dough to a thickness of 1/8 inch (3 mm). Use a 3-inch (8-cm) cookie cutter to cut out the cookies.

  5. Gather the dough scraps, re-roll, and continue cutting out cookies until all the dough is used.

  6. Use a spatula to transfer the cookies to the prepared cookie sheets, placing them 1 inch (2.5 cm) apart.

  7. Bake for 8-10 minutes, or until barely colored. Transfer to racks to cool.
