Nut and Spice Cookie Recipes - Tweedledee Cookies

 

Ingredients 

  • 2 1/2 cups/375 g all-purpose/plain flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp ground cinnamon

  • 1/4 tsp ground ginger

  • 1/4 tsp salt

  • 1/2 cup/125 g butter, softened

  • 1/2 cup/125 g vegetable shortening

  • 2 large eggs

  • 1 cup/200 g firmly packed dark brown sugar

  • 1/2 cup/90 g raisins

  • 1/2 cup/50 g coarsely chopped walnuts 

MILK FROSTING:

  • 1 1/2 cups/225 g confectioners'/icing sugar

  • 1/2 cup/125 ml milk or more as needed


Method:

  1. Preheat the oven to 375°F/190°C/gas 5. Butter two cookie sheets.

  2. Sift the flour, baking powder, cinnamon, ginger, and salt into a large bowl.

  3. Beat the butter, shortening, and brown sugar in a large bowl with an electric mixer at high speed until creamy.

  4. Add the eggs, beating until just blended. Mix in the dry ingredients, raisins, and walnuts.

  5. Drop teaspoons of the dough 1 inch (2.5 cm) apart onto the prepared cookie sheets.

  6. Bake for 8-10 minutes, or until just lightly browned at the edges. Transfer the cookies to racks to cool.

  7. Milk Frosting: Mix the confectioners' sugar and enough milk in a small bowl to make a drizzling consistency. Drizzle the frosting over the cookies.
