Nut and Spice Cookie Recipes - Toffee Peanut Squares

Ingredients 

  • 3/4 cup/180 g butter

  • 1 large egg

  • 2/3 cup/140 g firmly packed light brown sugar

  • 1 1/2 tsp baking powder

  • 1 1/3 cups/200 g all-purpose/plain flour

  • 1 3/4 cups/430 ml sweetened condensed milk

  • 1/8 tsp salt

  • 1 cup/100 g finely chopped peanuts


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Line a baking sheet with parchment paper.

  2. Beat 2/3 cup (150 g) of butter, the egg, 1/3 cup (70 g) brown sugar, and the baking powder in a large bowl until creamy. 

  3. Beat in the flour. Pour the mixture onto the prepared baking sheet, spreading it out.

  4. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Lower the oven temperature to 300°F/150°C/gas 2.

  5. Cook the remaining butter, remaining sugar, condensed milk, and salt in a small saucepan over low heat, stirring constantly, until well blended.

  6. Remove from heat and stir in the peanuts. Pour the peanut mixture over the baked cake.

  7. Bake for 15 minutes more. Turn off the oven and let the brownies cool in the oven with the door slightly ajar. Cut into squares.
