Nut and Spice Cookie Recipes - Spiced Black Pepper Cookies

 

Ingredients 

  • 3 cups/450 g all­purpose/plain flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp ground cinnamon

  • 1 tsp ground allspice

  • 1/4 tsp salt

  • 1 cup/250 g butter

  • 1 cup/200 g granulated sugar

  • 4 tbsp heavy/double cream

  • 1 tsp freshly ground black pepper


Method:

  1. sift the flour, baking powder, baking soda, cinnamon, allspice, and salt into a medium bowl.

  2. Beat the butter and sugar in a large bowl with an electric mixer at high speed until creamy. Beat in the cream.

  3. Mix in the dry ingredients and black pepper to form a smooth dough. Form the dough into a log 2 1/2 inches (6 cm) in diameter.

  4. Wrap in plastic wrap and refrigerate for 30 minutes. Preheat the oven to 375°F/190°C/gas 5. Butter four cookie sheets.

  5. Slice the dough 1/4 inch (5 mm) thick and place the cookies 1 inch (2.5 cm) apart on the prepared cookie sheets.

  6. Bake, one sheet at a time, for 5-7 minutes, or until just golden. Transfer to racks and let cool completely.
