Nut and Spice Cookie Recipes - Spiced Black Pepper
Cookies
Ingredients

cups/450
g
allpurpose/plain
flour

1 tsp baking powder

1 tsp baking soda
-
1 tsp ground cinnamon
-
1 tsp ground allspice
-
1/4 tsp salt

1 cup/250 g butter
-
1 cup/200 g granulated
sugar

4 tbsp heavy/double cream

1 tsp freshly ground black
pepper
Method:
-
sift the
flour, baking powder, baking soda, cinnamon,
allspice, and salt into a medium bowl.

Beat the
butter and sugar in a large bowl with an
electric mixer at high speed until creamy. Beat
in the cream.

Mix in the
dry ingredients and black pepper to form a
smooth dough. Form the dough into a log 2 1/2
inches (6 cm) in diameter.

Wrap in
plastic wrap and refrigerate for 30 minutes.
Preheat the oven to 375°F/190°C/gas 5. Butter
four cookie sheets.

Slice the
dough 1/4 inch (5 mm) thick and place the
cookies 1 inch (2.5 cm) apart on the prepared
cookie sheets.

Bake, one
sheet at a time, for 5-7 minutes, or until just
golden. Transfer to racks and let cool
completely.
