Nut and Spice Cookie Recipes - Southern Italian Biscotti

 

Ingredients 

  • 1 1/3 cups/200 g all­purpose/plain flour

  • 1/2 tsp allspice

  • 1/8 tsp salt

  • 2 large egg whites

  • 1/4 cup/50 g granulated sugar

  • 1 tbsp honey

  • 1/2 cup/75 g blanched almonds, halved


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Line a cookie sheet with parchment paper. Sift the flour, allspice, and salt into a medium bowl.

  2. Beat the egg whites, sugar, and honey in a large bowl with an electric mixer at high speed until frothy. Mix in the dry ingredients and almonds.

  3. Form the mixture into a 9-inch (23-cm) log. Bake for 25-30 minutes, or until lightly browned and firm to the touch.

  4. Let cool completely and wrap in aluminum foil. Let stand for 12 hours. Reheat the oven to 300°F/150°C/gas 2.

  5. Discard the foil. Slice the dough 1/8 inch (3 mm) thick and arrange on cookie sheets.

  6. Bake for 15-20 minutes, or until golden and toasted. Let cool completely.
