Nut and Spice Cookie Recipes - Pecan Melting Moments

 

Ingredients 

  • 1 1/4 cups/180 g all-purpose/plain flour

  • 1/8 tsp salt

  • 1/2 cup/125 g butter, softened

  • 1/3 cup/50 g confectioners'/icing sugar

  • 1/2 tsp vanilla extract/essence

  • 1/2 cup/50 g finely chopped pecans


Method:

  1. Preheat the oven to 400°F/200°C/gas 6. Set out two cookie sheets. Sift the flour and salt into a medium bowl.

  2. Beat the butter, 1/4 cup (30 g) confectioners' sugar, and vanilla in a large bowl with an electric mixer at high speed until creamy.

  3. Mix in the dry ingredients and pecans to make a stiff dough. Press the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

  4. Form the dough into balls the size of walnuts and place 1 inch (2.5 cm) apart on the cookie sheets.

  5. Bake for 10-12 minutes, or until firm to the touch but not browned. Transfer to racks to cool. Dust with the remaining confectioners' sugar.
