Nut and Spice Cookie Recipes - Pecan Ginger Cookies

 

Ingredients 

  • 2 1/3 cups/250 g all­purpose/plain flour

  • 2 tap baking soda

  • 1 tbsp ground ginger

  • 1/4 tap salt

  • 1 1/4 cups/250 g firmly packed light brown sugar

  • 3 tbsp light corn syrup/golden syrup

  • 4 tbsp water

  • 1 large egg

  • 1 cup/100 g finely chopped pecans


Method:

  1. Preheat the oven to 375°F/190°C/gas 5. Butter three cookie sheets. Sift the flour, baking soda, ginger, and salt into a medium bowl.

  2. Beat the brown sugar, corn syrup, water, and egg in a large bowl with an electric mixer at high speed until well blended. 

  3. Stir in the dry ingredients and pecans. Drop teaspoons of the dough 2 inches (5 cm) apart onto the prepared cookie sheets.

  4. Bake, one sheet at a time, for 10-12 minutes, or until just golden at the edges. Transfer to racks to cool.
