Pecan Ginger
Cookies
Ingredients

cups/250 g allpurpose/plain flour

2 tap baking
soda
-
1 tbsp ground
ginger
-
1/4 tap salt
-
1 1/4
cups/250 g firmly packed light brown sugar

3 tbsp light
corn syrup/golden syrup

4 tbsp water
-
1 large egg
-
1 cup/100 g
finely chopped pecans
Method:

Preheat the
oven to
375°F/190°C/gas
5. Butter
three cookie sheets. Sift the flour, baking
soda, ginger, and salt into a medium bowl.

Beat the
brown sugar, corn syrup, water, and egg in a
large bowl with an electric mixer at high speed
until well blended.

Stir in the
dry ingredients and pecans. Drop teaspoons of
the dough 2 inches (5 cm) apart onto the
prepared cookie sheets.

Bake, one
sheet at a time, for 10-12 minutes, or until
just golden at the edges. Transfer to racks to
cool.
