Orange-Glazed Nut
Cookies
Ingredients
1 large egg white
1/8 tsp salt
1/2 cup/100 g
superfine/caster sugar
1 cup/150 g finely ground
hazelnuts + more as needed
1 cup/150 g finely ground
almonds+ more as needed
1/2 cup/50 g coarsely
chopped pistachios
2 tsp finely chopped
candied peel
ORANGE
GLAZE:
2/3 cup/100 ml
confectioners'/icing sugar
1 tbsp orange juice
grated zest of 1/2

Method:
Beat the egg
white and salt in a large bowl with an electric
mixer at medium speed until frothy.
With mixer at
high speed, gradually add the superfine sugar,
beating until stiff, glossy peaks form.
Use a large
rubber spatula to fold in the hazelnuts,
almonds, pistachios, and candied peel to form a
stiff dough. Add more ground nuts if the dough
is very sticky.
Press the
dough into a disk, wrap in plastic wrap, and
refrigerate for 30 minutes. Preheat the
oven to 300°F/150°C/ gas 2. Line three cookie
sheets with parchment paper.
Roll out the
dough between sheets of waxed paper dusted with
confectioners' sugar to a thickness of 1/4 inch
(5 mm). Cut into 2 x 3/4-inch (5 x 4-cm)
strips.
Gather the
dough scraps, re-roll, and continue cutting out
cookies until all the dough is used.
Use a spatula
to transfer the cookies to the prepared cookie
sheets, placing them 1 inch (2.5 cm) apart.
Bake, one
sheet at a time, for 12-15 minutes, or until
golden brown. Transfer to racks to cool.
Orange Glaze:
Mix the confectioners' sugar, orange juice, and
orange zest in a small bowl. Dip the cookies
halfway into the glaze and let stand for 30
minutes until set.
