Nut and Spice Cookie Recipes - Lombardy Cookies

 

Ingredients  

  • 1 tbsp baking soda

  • 1/2 cup/125 ml milk

  • 3 1/3 cups/500 g all-purpose/plain flour

  • 6 tbsp extra-virgin olive oil

  • 3/4 cup/150 g granulated sugar

  • 1/2 cup/50 g coarsely chopped toasted hazelnuts

  • 4 tbsp grape juice or vincotto


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter three cookie sheets. Mix the baking soda and milk in a small bowl.

  2. Use a wooden spoon to mix the flour, olive oil, sugar, hazelnuts, grape juice, and baking soda mixture to make a soft dough.

  3. Form the dough into balls the size of walnuts and place 1 inch (2.5 cm) apart on the prepared cookie sheets, flattening them slightly.

  4. Bake, one sheet at a time, for 15-20 minutes, or until just golden. Transfer to racks and let cool completely.
