Lombardy Cookies
Ingredients

1 tbsp
baking
soda
-
1/2 cup/125
ml milk

3 1/3
cups/500
g
all-purpose/plain flour

6 tbsp
extra-virgin olive oil
-
3/4 cup/150 g
granulated sugar
-
1/2 cup/50 g
coarsely chopped toasted hazelnuts
-
4 tbsp grape
juice or vincotto
Method:

Preheat the
oven to 350°F/180°C/gas 4. Butter three cookie
sheets. Mix the baking soda and milk in a small
bowl.

Use a wooden
spoon to mix the flour, olive oil, sugar,
hazelnuts, grape juice, and baking soda mixture
to make a soft dough.

Form the
dough into balls the size of walnuts and place 1
inch (2.5 cm) apart on the prepared cookie
sheets, flattening them slightly.

Bake, one
sheet at a time, for 15-20 minutes, or until
just golden. Transfer to racks and let cool
completely.
