Nut and Spice Cookie Recipes - Just Cookies

Ingredients 

  • 1 1/4 cups/125 g coarsely chopped hazelnuts

  • 2/3 cup/140 g granulated sugar

  • 3 tbsp all-purpose/plain flour

  • 1 tbsp cornstarch/corn flour

  • 1/8 tsp salt

  • 3 tbsp butter, melted

  • 1 tsp vanilla extract/essence

  • 1 tsp ground cinnamon

  • 3 large egg whites, lightly beaten


Method:

  1. Stir together the hazelnuts, sugar, flour, cornstarch, and salt in a large bowl.

  2. Add the butter, vanilla, and cinnamon. Stir in the egg whites. Refrigerate for 30 minutes.

  3. Preheat the oven to 400°F/200°C/gas 6. Line two cookie sheets with aluminum foil.

  4. Drop 1/2 tablespoons of the dough 2 inches (5 cm) apart onto the prepared cookie sheets.

  5. Bake for 5-7 minutes, or until golden brown. Transfer to racks to cool.
