Nut and Spice Cookie Recipes - Indian Lady Cookies

 

Ingredients  

  • 3/4 cup/125 g all-purpose/plain flour

  • 3/4 cup/125 g cornstarch/corn flour

  • 1 tbsp ground cardamom

  • 1/8 tsp salt

  • 3 large eggs

  • 1 cup/200 g granulated sugar

  • 1/2 tsp vanilla extract/essence


Method:

  1. Butter two cookie sheets. Sift the flour, cornstarch, cardamom, and salt into a large bowl.

  2. Beat the eggs, sugar, and vanilla in a large bowl with an electric mixer at high speed until pale and thick. Mix in the dry ingredients.

  3. Drop teaspoons of the dough 2 inches (5 cm) apart onto the prepared cookie sheets. Cover with a clean kitchen towel and let rest for 12 hours.

  4. Preheat the oven to 300°F/150°C/gas 2. Bake for 25-35 minutes, or until golden brown. Transfer to racks and let cool.
