Nut and Spice Cookie Recipes - Hilton Squares

 

Ingredients 

  • 2 cups/300 g whole-wheat flour

  • 1 tbsp ground ginger

  • 1 1/2 tsp cream of tartar

  • 3/4 tsp baking soda

  • 1/8 tsp salt

  •  1 1/4 cups/310 g butter, cut up

  • 1/3 cup/50 g old-fashioned rolled oats

  • 1 1/2 cups/300 g firmly packed light brown sugar


Method:

  1. Preheat the oven to 325°F/170°C/gas 3. Butter a 13 x 9-inch (33 x 23-cm) baking pan.

  2. Sift the flour, ginger, cream of tartar, baking soda, and salt into a large bowl.

  3. Use a pastry blender to cut in the butter until the mixture resembles coarse crumbs. Stir in the oats and brown sugar.

  4. Firmly press the mixture into the prepared pan to form a smooth, even layer, pressing down with a floured fork.

  5. Bake for 20-30 minutes, or until lightly browned. Cool completely before cutting into bars.
