Nut and Spice Cookie Recipes - Hilton Squares
Ingredients

2 cups/300
g whole-wheat flour

1 tbsp ground ginger
-
1 1/2 tsp cream of tartar

3/4 tsp baking soda
-
1/8 tsp salt

1 1/4 cups/310 g
butter, cut up
-
1/3 cup/50 g old-fashioned
rolled oats
-
1 1/2 cups/300 g firmly
packed light brown sugar
Method:

Preheat the
oven to 325°F/170°C/gas 3. Butter a 13 x 9-inch
(33 x 23-cm) baking pan.

Sift the
flour, ginger, cream of tartar, baking soda, and
salt into a large bowl.

Use a pastry
blender to cut in the butter until the mixture
resembles coarse crumbs. Stir in the oats and
brown sugar.

Firmly press
the mixture into the prepared pan to form a
smooth, even layer, pressing down with a floured
fork.

Bake for
20-30 minutes, or until lightly browned. Cool
completely before cutting into bars.
