Nut and Spice Cookie Recipes - Golden Ginger Crisps

 

Ingredients 

  • 1 1/2 cups/225 g all­purpose/plain flour

  • 1 tbsp ground ginger

  • 2 tsp baking powder

  • 2 tsp baking soda

  • 2 tsp ground allspice

  • 1 tsp ground cinnamon

  • 1/8 tsp salt

  • 1/2 cup/125 g butter, cut up

  • 1/2 cup/100 g granulated sugar

  • 4 tbsp light corn syrup/golden syrup


Method:

  1. Preheat the oven to 400°F/200°C/gas 6. Butter two cookie sheets.

  2. Sift the flour, ginger, baking powder, baking soda, allspice, cinnamon, and salt into a large bowl.

  3. Use a pastry blender to cut in the butter until the mixture resembles fine crumbs. Stir in the sugar and corn syrup until well blended.

  4. Form the dough into balls the size of walnuts and place 2 inches (5 cm) apart on the prepared cookie sheets.

  5. Bake for 10-15 minutes, or until just golden. Watch them closely towards the end of the baking time as they darken very quickly.

  6. Cool on the sheets until the cookies firm slightly. Transfer to racks and let cool completely.
