Nut and Spice Cookie Recipes - Ginger Ropes

 

Ingredients 

  • 1 cup/150 g all­purpose/plain flour

  • 1/2 cup/75 g whole­wheat flour

  • 1 tbsp ground ginger

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup/125 g butter, cut up

  • 1/3 cup/70 g firmly packed light brown sugar

  • 1/4 cup/25 g finely chopped walnuts

  • 1 large egg, lightly beaten


Method:

  1. Sift the all-purpose and whole-wheat flours, ginger, baking powder, and salt into a large bowl.

  2. Use a pastry blender to cut in the butter until the mixture resembles coarse crumbs. Stir in the brown sugar and walnuts.

  3. Mix in the egg to form a smooth dough. Cover with plastic wrap and refrigerate for 30 minutes.

  4. Preheat the oven to 350°F/180°C/gas 4. Butter three cookie sheets. Form tablespoons of the dough into 6-inch (15-cm) ropes and fold the ropes in half.

  5. Twist the dough and place 1 1/2 inches (4 cm) apart on the prepared cookie sheets.

  6. Bake, one sheet at a time, for 12-15 minutes, or until lightly browned and firm to the touch. Transfer to racks to cool.
