Nut and Spice Cookie Recipes - Ginger Ropes
Ingredients

1 cup/150 g
allpurpose/plain flour
-
1/2 cup/75 g
wholewheat flour

1 tbsp ground
ginger
-
1 tsp baking
powder
-
1/4 tsp salt
-
1/2 cup/125 g
butter, cut up

1/3 cup/70 g firmly packed light brown sugar

1/4 cup/25 g
finely chopped walnuts

1 large egg,
lightly beaten
Method:

Sift the
all-purpose and whole-wheat flours, ginger,
baking powder, and salt into a large bowl.

Use a pastry
blender to cut in the butter until the mixture
resembles coarse crumbs. Stir in the brown sugar
and walnuts.

Mix in the
egg to form a smooth dough. Cover with plastic
wrap and refrigerate for 30 minutes.

Preheat the
oven to 350°F/180°C/gas 4. Butter three cookie
sheets. Form tablespoons of the dough into
6-inch (15-cm) ropes and fold the ropes in half.

Twist the
dough and place 1 1/2 inches (4 cm) apart on the
prepared cookie sheets.

Bake, one
sheet at a time, for
12-15
minutes, or
until lightly browned and firm to the touch.
Transfer to racks to cool.
