Nut and Spice Cookie Recipes - Ginger and Lemon Crisps

 

Ingredients 

  • 3 cups/450 g all­purpose/plain flour

  • 2 tsp ground ginger

  • 1/4 tsp ground cloves

  • 1/4 tsp salt

  • 1 1/2 cups/375 g butter, softened

  • 1 1/4 cups/250 g granulated sugar

  • 2 tbsp vanilla sugar

  • 1 large egg

  • 1 tbsp finely grated lemon zest

  • 1 tbsp fresh lemon juice

  • 1 tbsp chopped crystallized ginger

  • 1 tbsp colored sugar crystals


Method:

  1. Preheat the oven to 375°F/190°C/gas 5. Butler four cookie sheets. Sift the flour, ginger, cloves, and salt into a medium bowl.

  2. Beat the butter and granulated and vanilla sugars in a large bowl with an electric mixer at high speed until creamy.

  3. Add the egg and lemon zest and juice, beating until just blended. Mix in the dry ingredients to form a stiff dough.

  4. Insert the chosen design plate into a cookie press by sliding it into the head and locking in place.

  5. Press out the cookies, spacing about 1 inch (2.5 cm) apart on the prepared cookie sheets.

  6. Decorate each cookie with crystallized ginger and sprinkle with sugar crystals.

  7. Bake, one sheet at a time, for 10-12 minutes, or until firm to the touch and golden at the edges. Transfer to racks to cool.
