Nut and Spice Cookie Recipes - Fruit and Nut Turnovers

Ingredients 

  • 2 cups/300 g all­purpose/plain flour

  • 2/3 cup/150 g butter

  • 1 cup/250 g cream cheese, softened 

FILLING:

  • 1 cup/300 g apple or pineapple jam

  • 1 cup/100 g finely ground walnuts

  • 1 large egg, lightly beaten

  • 1/2 cup/75 g confectioners'/icing sugar, to dust


Method:

  1. Preheat the oven to 400°F/200°C/gas 6. Butter a large baking sheet.

  2. Sift the flour into a large bowl. Use your fingertips to rub in the butter and cream cheese. Shape into a ball.

  3. Cover with a clean cloth and refrigerate overnight. Divide the dough into 3 pieces. Roll out to 1/4-inch (5-mm) thick.

  4. Cut the dough into 2-3-inch (5-8-cm) squares. Mix the jam, walnuts, and egg in a small bowl until well blended.

  5. Spoon a teaspoonful of the filling in the center of each piece of dough. Fold the dough over the filling to form small triangles.

  6. Bake for 12-15 minutes, or until lightly browned. Dust with the confectioners' sugar.
