Eastern Diamonds
Ingredients

1 1/2 cups/225 g
allpurpose/plain
flour
-
1/8 tsp salt
-
4 tbsp butter, softened
-
1/4 cup/50 g granulated
sugar
-
1 large egg
-
1 tsp caraway seeds
-
2 tbsp colored
sugar
crystals
Method:

Sift the
flour and salt into a medium bowl. Beat the
butter and granulated sugar in a large bowl
until creamy.

Add the egg,
beating until just blended. Mix in the dry
ingredients and caraway seeds until stiff.
Refrigerate for 30 minutes.

Preheat the
oven to 325°F/170°C/gas 3. Butter three cookie
sheets. Roll out the dough to a thickness of 1/8
inch (3 mm).

Cut the dough
into 2-inch (5-cm) diamonds. Continue cutting
out cookies until all the dough is used.

Transfer the
cookies to the prepared cookie sheets, placing
them 1 inch (2.5 cm) apart. Sprinkle the tops of
the cookies with the sugar crystals.

Bake, one
sheet at a time, for 10-12 minutes, or until
pale gold. Transfer to racks to cool.
