Nut and Spice Cookie Recipes - Eastern Diamonds

 

Ingredients 

  • 1 1/2 cups/225 g all­purpose/plain flour

  • 1/8 tsp salt

  • 4 tbsp butter, softened

  • 1/4 cup/50 g granulated sugar

  • 1 large egg

  • 1 tsp caraway seeds

  • 2 tbsp colored sugar crystals


Method:

  1. Sift the flour and salt into a medium bowl. Beat the butter and granulated sugar in a large bowl until creamy.

  2. Add the egg, beating until just blended. Mix in the dry ingredients and caraway seeds until stiff. Refrigerate for 30 minutes.

  3. Preheat the oven to 325°F/170°C/gas 3. Butter three cookie sheets. Roll out the dough to a thickness of 1/8 inch (3 mm).

  4. Cut the dough into 2-inch (5-cm) diamonds. Continue cutting out cookies until all the dough is used.

  5. Transfer the cookies to the prepared cookie sheets, placing them 1 inch (2.5 cm) apart. Sprinkle the tops of the cookies with the sugar crystals.

  6. Bake, one sheet at a time, for 10-12 minutes, or until pale gold. Transfer to racks to cool.
