Nut and Spice Cookie Recipes - Date Pecan Squares

 

Ingredients 

  • 2/3 cup/100 g all-purpose/plain flour

  • 2/3 cup/100 g cornstarch/corn flour

  • 1/8 tsp salt

  • 1/2 cup/125 g butter, softened

  • 1/2 cup/100 g firmly packed light brown sugar

  • 1 large egg

  • 2/3 cup/60 g finely chopped pitted dates

  • 1 cup/100 g coarsely chopped pecans

  • 2 tbsp milk

  • 2 tbsp granulated sugar


Method:

  1. Preheat the oven to 375°F/190°C/gas 5. Line a 13 x 9-inch (33 x 23-cm) baking pan with aluminum foil, letting the edges overhang.

  2. Butter the foil. Sift the flour, cornstarch, and salt into a large bowl.

  3. Beat the butter, brown sugar, and egg in a large bowl with an electric mixer at high speed until well blended.

  4. Mix in the dry ingredients, dates, and pecans to form a stiff dough. Firmly press the mixture into the prepared pan to form a smooth, even layer.

  5. Brush with the milk and sprinkle with the granulated sugar. Bake for 20-30 minutes, or until just golden. Cool completely in the pan on a rack.

  6. Using the foil as handles, lift onto a cutting board. Peel off the foil. Cut into squares.
