Nut and Spice Cookie Recipes - Currant Spice Cookies
Ingredients

1 2/3 cups/250 g
allpurpose/plain flour

1 tsp baking soda

1 tsp ground cinnamon
-
1/4 tsp ground nutmeg

1/8 tsp ground cloves
-
1/8 tsp salt

1/2 cup/125 g butter,
softened

1 cup/200 g granulated
sugar

2 tsp milk
-
1 large egg, lightly beaten

1/2 cup/90 g
currants
Method:

Sift the
flour, baking soda, cinnamon, nutmeg, and cloves
into a medium bowl.

Beat the
butter and 3/4 cup (150 g) sugar in a large bowl
with an electric mixer at high speed until
creamy.

Add the milk
and egg, beating until just blended. Mix in the
dry ingredients, followed by the currants.

Press the
dough into a disk, wrap in plastic wrap, and
refrigerate for 30 minutes. Preheat the oven to
375°F/190°C/gas 5.

Set out three
cookie sheets. Roll out the dough on a lightly
floured surface to a thickness of 1/8 inch (3
mm).

Sprinkle with
the remaining sugar. Use a 2-inch (5-cm)
diamond-shaped cookie cutter to cut out the
cookies.

Gather the
dough scraps, re-roll, and continue cutting out
until all the dough is used. Transfer the
cookies to the cookie sheets.

Bake for 5-8
minutes, or until lightly browned. Transfer to
racks to cool.
