Nut and Spice Cookie Recipes - Chewy Frosted Bliss
Ingredients
1 cup/150 g
all-purpose/plain flour
1 tsp baking powder
1/4 tsp salt
1/2 cup/125 g butter,
softened
3/4 cup/150 g granulated
sugar
1 large egg
2 1/2 cups/250 g finely
chopped pitted dates
1 1/3 cups/130 g finely
chopped walnuts
8 oz/250 g semisweet/dark
chocolate, coarsely chopped
Method:
Preheat the oven
to 350°F/180°C/gas 4. Butter a 10 1/2 x 15 1/2-inch
(26 x 36-cm) jellyroll pan.
Sift the flour,
baking powder, and salt into a medium bowl.Beat the butter
and sugar in a large bowl with an electric mixer at
high speed until creamy.
Add the egg,
beating until just blended. Mix in the dry
ingredients, dates, and walnuts until well blended.
Spoon the mixture into the prepared pan.
Bake for
25-30
minutes, or until
firm to the touch. Cool completely in the pan. Melt
the chocolate in a double boiler over barely
simmering water.
Use a thin metal
spatula to spread the chocolate evenly over the top.
Set aside for 30 minutes before cutting into
squares.
