Nut and Spice Cookie Recipes - Cashew Squares

 

Ingredients 

  • 1 2/3 cups/250 g all­purpose/plain flour

  • 1/8 tsp salt

  • 4 tbsp butter, cut up

  • 3 large egg yolks, lightly beaten

  • 2/3 cup/140 g granulated sugar

  • 1/4 cup/25 g coarsely chopped cashew nuts

  • Grated zest of 1/2 lemon

  • 6 tbsp milk


Method:

  1. sift the flour and salt into a large bowl. Use a pastry blender to cut in the butter until the mixture resembles coarse crumbs.

  2. Add the egg yolks, granulated sugar, cashew nuts, lemon zest, and milk to form a stiff dough.

  3. Press the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

  4. Preheat the oven to 325°F/170°C/gas 3. Butter two cookie sheets. Roll out the dough on a lightly floured surface to a thickness of 1/4 inch (5 mm).

  5. Cut into 1 1/2-inch (4-cm) wide strips, then cut the strips into 2 1/2-inch (6cm) rectangles.

  6. Use a spatula to transfer the cookies to the prepared cookie sheets, placing them 1 inch (2.5 cm) apart.

  7. Bake for 12-15 minutes, or until just golden. Transfer to racks to cool.
