Nut and Spice Cookie Recipes - Cardamom Biscotti

 

Ingredients 

  • 2 1/2 cups/375 g bread flour

  • 1 tsp baking powder

  • 1 tsp ground cardamom

  • 1/4 tsp ground allspice

  • 1/4 tsp salt

  • 1 1/4 cups/250 g raw sugar (Barbados or Demerara)

  • 2 large eggs + 1 egg white

  • 1 tsp lemon extract/essence

  • 2 tbsp finely chopped candied mixed peel

  • 1 tbsp finely grated lemon zest

  • 1 tbsp finely grated orange peel 

GLAZE:

  • 1 large egg yolk

  • 1 tbsp milk

  • 1 tsp granulated sugar

  • 1/4 tsp ground cardamom


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter two cookie sheets. Sift the flour, baking powder, cardamom, allspice, and salt into a medium bowl.

  2. Stir in the sugar, candied peel, and lemon and orange zests. Beat the eggs, egg white, and lemon extract until frothy.

  3. Mix in the dry ingredients. Form into three 10-inch (25-cm) logs and place 4 inches (10 cm) apart on the prepared cookie sheets.

  4. Cardamom Glaze: Mix the egg yolk and milk and brush over the logs. Sprinkle with sugar and cardamom.

  5. Bake for 25-30 minutes, or until firm. Transfer to a cutting board. Reduce the oven temperature to 300°F/150°C/gas 2.

  6. Cut on the diagonal into 1-inch (2.5-cm) slices. Bake for 8-10 minutes, or golden and toasted. Transfer to racks to cool.
