Brandy Spice
Cookies
Ingredients

1/3 cup/50
g raisins

2 tbsp brandy

cups/225 g all-purpose/plain
flour

1 tsp ground cinnamon
-
1 tsp freshly grated nutmeg

1/2 tsp baking soda
-
1/8 tsp salt

3/4 cup/180 g butter,
softened

2/3 cup/140 g granulated
sugar
-
1/4 cup/50 g firmly packed
dark brown sugar

4 tbsp milk
-
grated zest of 1 orange
Method:

Preheat the
oven to 350°F/180°C/gas 4. Butter two cookie
sheets.

Plump the
raisins in the brandy in a small bowl for 15
minutes, or until almost all the liquid has been
absorbed.

Sift the
flour, cinnamon, nutmeg, baking soda, and salt
into a medium bowl.

Beat the
butter and granulated and brown sugars in a
large bowl with an electric mixer at high speed
until creamy.

Mix in the
milk, raisin mixture, dry ingredients, and
orange zest. Drop teaspoons of the dough 1 inch
(2.5 cm) apart onto the prepared cookie sheets.

Bake for
10-15 minutes, or until just golden. Cool on the
sheets until the cookies firm slightly. Transfer
to racks to finish cooling.
