Aniseed Coriander
Cookies
Ingredients
3/4 cup/125 g
allpurpose/plain flour
1 tsp ground
coriander
1/2 tsp
ground aniseeds
1/8 tsp salt
2 large eggs
2/3 cup/140 g
granulated sugar
Method:
Preheat the
oven to 350°F/180°C/gas 4. Butter two cookie
sheets.
Sift the
flour, coriander, aniseeds, and salt into a
large bowl. Beat the eggs and sugar in a medium
bowl with an electric mixer at high speed until
pale and thick.
Mix in the
dry ingredients until well blended. Drop
teaspoons of the cookie dough 3 inches (8 cm)
apart onto the prepared cookie sheets.
Bake for 8-12
minutes, or until faintly tinged with brown on
top and slightly darker at the edges.
Use a spatula
to turn the cookies over. Bake for 3-5 minutes
more, or until firm to the touch. Transfer to
racks and let cool completely.
