Nut and Spice Cookie Recipes - Aniseed Coriander Cookies

 

Ingredients 

  • 3/4 cup/125 g all­purpose/plain flour

  • 1 tsp ground coriander

  • 1/2 tsp ground aniseeds

  • 1/8 tsp salt

  • 2 large eggs

  • 2/3 cup/140 g granulated sugar


Method:

  1. Preheat the oven to 350°F/180°C/gas 4. Butter two cookie sheets.

  2. Sift the flour, coriander, aniseeds, and salt into a large bowl. Beat the eggs and sugar in a medium bowl with an electric mixer at high speed until pale and thick.

  3. Mix in the dry ingredients until well blended. Drop teaspoons of the cookie dough 3 inches (8 cm) apart onto the prepared cookie sheets.

  4. Bake for 8-12 minutes, or until faintly tinged with brown on top and slightly darker at the edges.

  5. Use a spatula to turn the cookies over. Bake for 3-5 minutes more, or until firm to the touch. Transfer to racks and let cool completely.
