Nut and Spice Cookie Recipes - Almond Munchies 

 

Ingredients 

  • 3 cups/450 g all­purpose/plain flour

  • 1/2 tsp salt

  • 1 1/2 cups/375 g butter, softened

  • 1 1/4 cups/250 g granulated sugar

  • 2 tbsp vanilla sugar

  • 1 1/2 cups/200 g finely ground almonds


Method:

  1. Preheat the oven to 375°F/190°C/gas 5. Butter four cookie sheets. Sift the flour and salt into a medium bowl.

  2. Beat the butter and granulated and vanilla sugars in a large bowl with an electric mixer at high speed until creamy.  

  3. Gradually mix in the dry ingredients and ground almonds to form a smooth dough.

  4. Insert a flower or star design plate into a cookie press by sliding it into the head and locking in place.

  5. Press out the cookies, spacing about 1 inch (2.5 cm) apart on the prepared cookie sheets.

  6. Bake, one batch at a time, for 10-15 minutes, or until golden brown and firm at the edges. Transfer to racks to cool.
