No-Bake Cookie

Ingredients

3/4 cup/150 g granulated
sugar

1 tbsp vanilla sugar

6 tbsp
butter

1 tbsp
honey

2 oz/60 g marzipan,
grated

3/4
cup/125 g toasted
hazelnuts, finely
chopped

1 cup/150 g toasted
almonds, coarsely
chopped

2/3 cup/10 g candied
cherries, finely
chopped

3 tbsp
candied lemon
peel, finely chopped

1 tbsp
pistachios, crushed

tsp salt

3 oz/90 g
semisweet/dark chocolate, coarsely chopped
Method:

Line a large
baking sheet with aluminum foil. Oil the foil.
Melt both sugars in a medium saucepan over low heat.

Stir in the butter, honey, and marzipan. Add the
hazelnuts, almonds, candied cherries, lemon peel,
pistachios, and salt.

Cook, stirring constantly, for
3-5 minutes until well mixed. Pour the mixture onto
the foil.

Flatten the mixture and spread it out to
a thickness of 1/2 inch (1-cm). Set aside to cool.

Melt the chocolate in a double boiler over barely
simmering water. Spread over the cookie. Use a
sharp knife to cut into squares.
