No-Bake Cookie Recipes - Praline Squares Recipe

Ingredients

  • 3/4 cup/150 g granulated sugar

  • 1 tbsp vanilla sugar

  • 6 tbsp butter

  • 1 tbsp honey

  • 2 oz/60 g marzipan, grated

  • 3/4 cup/125 g toasted hazelnuts, finely chopped

  • 1 cup/150 g toasted almonds, coarsely chopped

  • 2/3 cup/10 g candied cherries, finely chopped

  • 3 tbsp candied lemon peel, finely chopped

  • 1 tbsp pistachios, crushed

  • 1/8 tsp salt

  • 3 oz/90 g semisweet/dark chocolate, coarsely chopped


Method:

  1. Line a large baking sheet with aluminum foil. Oil the foil. Melt both sugars in a medium saucepan over low heat.

  2. Stir in the butter, honey, and marzipan. Add the hazelnuts, almonds, candied cherries, lemon peel, pistachios, and salt.

  3. Cook, stirring constantly, for 3-5 minutes until well mixed. Pour the mixture onto the foil.

  4. Flatten the mixture and spread it out to a thickness of 1/2 inch (1-cm). Set aside to cool.

  5. Melt the chocolate in a double boiler over barely simmering water. Spread over the cookie. Use a sharp knife to cut into squares.
