No-Bake Cookie Recipes - Mocha Nut Wedges Recipe

Ingredients

  • 6 tbsp butter, cut up

  • 2 tbsp granulated sugar

  • 1 3/4 cups/215 g graham cracker crumbs/crushed digestive biscuits

  • 1 cup/100 g coarsely chopped pecans

  • 1 tbsp freeze-dried coffee granules dissolved in 1 tbsp hot water

  • 2 tbsp plain yogurt


Method:

  1. Set out an 8-inch (20-cm) spring form pan. Melt the butter with the sugar in a small saucepan over low heat until the sugar has dissolved completely.

  2. Remove from the heat and mix in the graham cracker crumbs, pecans, coffee, and yogurt.

  3. Firmly press the mixture into the prepared pan to form a smooth, even layer.

  4. Refrigerate for at least 1 hour, or until set. Loosen and remove the pan sides and cut into wedges.
