No-Bake Cookie Recipes - Halloween Spookies Recipe

Ingredients

  • 1 3/4 cups/215 g graham cracker crumbs/crushed digestive biscuits

  • 3/4 cup/150 g granulated sugar

  • 2 tbsp unsweetened cocoa powder

  • 1/2 cup/75 g finely ground almonds

  • 6 tbsp butter, melted

  • 2 tbsp milk + more as needed 

COLORED BUTTER ICING:

  • 1/2 cup/125 g butter, softened

  • 1 2/3 cups/250 g confectioners'/icing sugar

  • 1/2 tsp vanilla extract/essence

  • Few drops each blue, yellow, or red food coloring

  • Small candies, licorice whips, and candied cherries, to decorate


Method:

  1. Mix the graham cracker crumbs, sugar, cocoa, and almonds in a large bowl.

  2. Stir in the melted butter and enough milk to form a stiff dough.

  3. Divide the mixture into 15 pieces and form into balls the size of walnuts. Flatten into 1-inch (2.5-cm) thick rounds.

  4. Colored Butter Icing: Beat the butter, confectioners' sugar, and vanilla in a large bowl with an electric mixer at high speed until creamy.

  5. Divide into three small bowls. Add the food coloring to each bowl. Mix pale colors for smiley faces and deep blue and red icing for a spooky design.

  6. Spread the icing over the tops of the cookies. Decorate with candies or candied cherries to resemble eyes and noses.

  7. Cut up the licorice whips into short lengths to resemble smiley mouths, hair, and other decorative details.
