No-Bake Cookie Recipes - Glazed Chocolate Cookie Cake Recipe

Ingredients

• 1/2 cup/125 g butter, cut up

• 1 1/2 tbsp light corn syrup/golden syrup

• 2 tbsp unsweetened cocoa powder

• 1 cup/180 g golden raisins/sultanas

• 2 cups/250 g graham cracker crumbs/crushed digestive biscuits

• 6 oz/180 g semisweet/dark chocolate, coarsely chopped

Method:

1. Set out a 10 1/2 x 15 1/2-inch (26 x 36-cm) jelly­roll pan. Melt the butter with the corn syrup and cocoa in a medium saucepan over low heat.

2. Remove from the heat and stir in the raisins and graham cracker crumbs.

3. Firmly press the mixture onto the baking pan. Melt the chocolate in a double boiler over barely simmering water.

4. Pour the melted chocolate evenly over the cookie base. Let stand until set and cut into small bars.
