No-Bake Cookie Recipes - Double Chocolate Cookies Recipe

Ingredients

  • 2 oz/60 g semisweet/dark chocolate, coarsely chopped

  • 2 1/2 cups/310 g vanilla wafer crumbs

  • 1/2 cu/50 g finely chopped pecans

  • 1 can (14 oz/400 g) sweetened condensed milk

  • 10 oz/300 g white chocolate, coarsely chopped

  • 1/2 cup/90 g semisweet/dark chocolate chips


Method:

  1. Line four cookie sheets with parchment paper. Melt the semisweet chocolate in a double boiler over barely simmering water.

  2. Mix the vanilla wafer crumbs, pecans, condensed milk, and melted semisweet chocolate in a large bowl until well blended.

  3. Form the mixture into balls the size of walnuts and place 1 inch (2.5 cm) apart on the prepared cookie sheets, flattening them slightly.

  4. Refrigerate for 30 minutes until firm to the touch. Melt the white chocolate in the double boiler over barely simmering water.

  5. Spread the white chocolate over the tops of the cookies. Decorate with the chocolate chips. Let stand for 30 minutes until set.
