No-Bake Cookie Recipes - Chocolate Marshmallow Bites Recipe

Ingredients

  • 5 oz/150 g white chocolate, coarsely chopped

  • 2 tbsp lightly crushed vanilla wafers

  • 1/2 cup/50 g coarsely chopped pecans

  • 1/2 cup/50 g coarsely chopped dried apricots

  • 1/2 cup/50 g mini marshmallows

  • 4 candied cherries, coarsely chopped

  • 3 oz/90 g semisweet/dark chocolate, coarsely chopped

  • silver balls or sugar strands, jimmies, sprills, or sprinkles, to decorate


Method:

  1. Line a cookie sheet with waxed paper. Melt the white chocolate in a double boiler over barely simmering water.

  2. Remove from the heat and mix in the vanilla wafers, pecans, apricots, marshmallows, and candied cherries until well coated.

  3. Drop heaped teaspoons onto the cookie sheet. Refrigerate for 1 hour, or until set.

  4. Melt the semisweet chocolate in a double boiler over barely simmering water.

  5. Remove from the heat and dip the cookies halfway into the semisweet chocolate.

  6. Decorate with the silver balls or sprinkle with sugar strands. Let stand for 30 minutes until set.
