No-Bake Cookie Recipes - Chocolate Hazelnut Squares Recipe

Ingredients

  • 1/2 cup/75 g whole hazelnuts

  • 5 oz/150 g semisweet/dark chocolate, coarsely chopped

  • 2/3 cup/150 g butter, cut up

  • 1/8 tsp salt

  • 1 1/4 cups/150 g graham cracker crumbs/crushed digestive biscuits


Method:

  1. Preheat the oven to 325°F/170°C/gas 3. Butter an 8-inch (20-cm) square baking pan.

  2. Spread the nuts on a large baking sheet. Toast for 7 minutes, or until lightly golden.

  3. Transfer to a large cotton kitchen towel. Fold the towel over the nuts and rub these through the towel to remove the thin inner skins.

  4. Pick out the nuts and chop coarsely. Melt the chocolate with the butter and salt in a double boiler over barely simmering water.

  5. Remove from the heat and mix in the graham cracker crumbs and chopped hazelnuts until well coated.

  6. Firmly press the mixture into the prepared pan to form a smooth, even layer. Refrigerate for at least 1 hour, or until set. Cut into squares.
