No-Bake Cookie Recipes - Banana Squares Recipe

Ingredients

  • 2 tbsp fresh lemon juice

  • 2 tbsp honey

  • 2/3 cup/150 ml water

  • 2 1/4 cups/225 g coarsely chopped dried apricots

  • 2 1/4 cups/225 g coarsely chopped bananas

  • 6 tbsp butter, cut up

  • 1 cup/200 g firmly packed light brown sugar

  • 1 1/4 cups/125 g corn flakes


Method:

  1. Bring the lemon juice, honey, and water to a boil with the apricots and bananas in a medium saucepan over medium heat.

  2. Reduce the heat and simmer over low heat for 25-30 minutes, or until the fruit has softened.

  3. Remove from the heat and let cool for 15 minutes. Butter an 8-inch (20-cm) baking pan.

  4. Melt the butter with the brown sugar in a medium saucepan over low heat until the sugar has dissolved completely.

  5. Mix in the corn flakes until well coated. Firmly press half the corn flake mixture into the prepared pan to form a smooth, even layer.

  6. Spoon the apricot mixture evenly over the base and cover with the remaining corn flake mixture. Cool completely before cutting into squares.
