No-Bake Cookie Recipes - Almond Brittle Recipe

Ingredients

  • 1 cup/200 g granulated sugar

  • 2 cups/300 g un-peeled almonds

  • 1 tsp vanilla extract/essence

  • 2 tbsp almond oil


Method:

  1. Place the sugar in a large heavy-bottomed saucepan over medium low heat.

  2. Stir in the almonds and vanilla. Cook, stirring constantly with a wooden spoon, until the sugar begins to stick to the almonds.

  3. The mixture should become semi liquid and the almonds will begin to stick together.

  4. Grease a marble surface with the almond oil. Pour the mixture onto the surface and let cool to warm.

  5. Use a metal spatula to work the mixture until it is about 1/2-inch (1-cm) thick. Leave until almost, but not completely, cool.

  6. Use a long sharp knife to cut the nougat into bars. Set aside for 12 hours in a cool place before serving.
