Meringue Recipes - Pine Nut Crispies Recipe

Ingredients

  • 3/4 cup/150 g pine nuts

  • 1 1/2 cups/150 g finely chopped almonds

  • 1 1/4 cups/250 g granulated sugar

  • 1/2 tsp vanilla extract/essence

  • 2 large egg whites


Method:

  1. Line a cookie sheet with parchment paper. Place small heaps of pine nuts (about 10 pine nuts per heap) on the prepared cookie sheet.

  2. Mix the almonds, sugar, and vanilla in a large bowl. Beat the egg whites in a large bowl with an electric mixer at high speed until stiff peaks form.

  3. Use a  large rubber spatula to fold the beaten whites into the almond mixture.

  4. Drop teaspoons of the mixture on top of the pine nuts to cover them completely. Refrigerate for 30 minutes.

  5. Preheat the oven to 300°F/150°C/gas 2. Bake for 18-20 minutes, or until set.

  6. Turn off the oven. Cool the meringues completely in the oven with the door ajar.
