Meringue Recipes - Mississippi Meringues Recipe
Ingredients

cup/100 g superfine/caster sugar

2/3 cup/100
g confectioners'/icing sugar

2 tbsp
unsweetened cocoa powder

4 large egg whites
-
1/8 tsp salt
Method:

Preheat the oven
to 300°F/150°C/gas 2. Line two cookie sheets with
parchment paper.

Stir together the superfine
sugar, confectioners' sugar, and cocoa in a medium
bowl.

Beat the egg whites and salt in a large bowl
with an electric mixer at medium speed until soft
peaks form.

With mixer at high speed, gradually
beat in half the sugar mixture, beating until stiff,
glossy peaks form.

Use a large rubber spatula to
fold in the remaining sugar mixture. Fit a pastry
bag with a 1/2-inch (1-cm) star tip.

Fill the pastry
bag, twist the opening tightly closed, and squeeze
out small stars, spacing 1 inch (2.5 cm) apart on
the prepared cookie sheets.

Bake for 40-50
minutes, or until the meringues are dry to the
touch. Turn off the oven. Leave in the warm oven
for 30 minutes.

Using the parchment paper as
handles, lift the meringues onto a rack. Carefully
peel off the paper and let cool completely.
