Meringue Recipes - Linda's Brown Sugar Meringues Recipe
Ingredients
3 1/2 oz/100
g egg whites (3 1/2
large egg whites)
1 cup/200 g soft dark brown sugar
2 tbsp coarsely chopped almonds
Method:
Preheat the oven
to 300°F/150°C/gas 2. Line two cookie sheets with
parchment paper.
Mix the egg whites and brown
sugar in a large bowl over barely simmering water,
stirring until the sugar has dissolved and the
mixture is warm to the touch.
Remove the bowl from
the heat and whisk with an electric mixer until
thick and cool, about 15-20 minutes.
Fold in 1
tablespoon of almonds. Drop tablespoons of the
mixture 2 inches (5 cm) apart onto the prepared
cookie sheets.
Sprinkle with the remaining
almonds. Bake for 12-15 minutes, or until crisp
and dry to the touch. Cool completely in the oven.
