Meringue Recipes - Great Barrier Reef Meringues Recipe

Ingredients

  • 3 1/2 oz/100 g egg whites  (3 1/2 large egg whites)

  • 1 cup/200 g soft dark brown sugar

  • 2 tbsp coarsely chopped hazelnuts


Method:

  1. Preheat the oven to 300°F/150°C/gas 2. Line two cookie sheets with parchment paper.

  2. Mix the egg whites and brown sugar in a large bowl over barely simmering water, stirring until the sugar has dissolved and the mixture has become warm to the touch.

  3. Remove the bowl from the heat and whisk with an electric mixer until thick and cool, about 15-20 minutes.

  4. Fold in 1 tablespoon of nuts. Drop tablespoons of the mixture 2 inches (5 cm) apart onto the prepared cookie sheets.

  5. Sprinkle with the remaining 1 tablespoon nuts. Bake for 12-15 minutes, or until crisp and dry to the touch. Cool completely in the oven.
