Meringue Recipes - Chocolate Amaretti Cookies Recipe

Ingredients

• 1 cup/200 g granulated sugar

• 1 1/4 cups/180 g finely ground almonds

• 1 tbsp cornstarch/corn flour

• 2 large egg whites

• 1 tsp unsweetened cocoa powder

• 1/8 tsp salt

Method:

1. Preheat the oven to 350°F/180°C/gas 4. Butter two cookie sheets.

2. Mix the sugar, almonds, cornstarch, egg whites, cocoa, and salt in a large bowl until well blended.

3. Drop heaping teaspoons of the dough 1 inch (2.5 cm) apart onto the prepared cookie sheets.

4. Bake for 10-12  minutes, or until firm to the touch. Transfer to racks and let cool completely.
