Meringue Recipes - Candied Coconut Meringues Recipe

Ingredients

  • 2 large egg whites

  • 1/8 tsp salt

  • 1/2 cup/100 g superfine/caster sugar

  • 1 cup/125 g shredded/ desiccated coconut

  • candied cherries, to decorate


Method:

  1. Preheat the oven to 325°F/170°C/gas 3. Line a cookie sheet with parchment paper.

  2. Beat the egg whites and salt in a large bowl with an electric mixer at medium speed until frothy.

  3. With mixer at high speed, gradually add the sugar, beating until stiff, glossy peaks form.

  4. Use a large rubber spatula to fold in the coconut. Drop teaspoons of the meringue 2 inches (5 cm) apart onto the prepared cookie sheet.

  5. Decorate with the cherries. Bake for 35-45 minutes, or until dry and crisp.

  6. Turn the oven off and let the meringues cool in the oven with the door ajar.
