Meringue Recipes - Australian Macaroons Recipe
Ingredients

2 large egg
whites
-
1/8 tsp salt
-
3/4 cup/150
g granulated
sugar

1 1/2
cups/185 g shredded
coconut
-
1
cup/100 g coarsely
chopped macadamia nuts
Method:

Preheat the oven
to 350°F/180°C/gas 4. Butter a cookie sheet.

Beat the egg whites and salt in a large bowl with an
electric mixer at medium speed until frothy.

With
mixer at high speed, gradually add the sugar,
beating until stiff, glossy peaks form.

Use a
large rubber spatula to fold in the coconut and
macadamia nuts.

Drop teaspoons of the mixture 1
inch (2.5 cm) apart onto the prepared cookie sheet.

Bake for 10-15 minutes, or until lightly golden. Transfer to racks to cool.
